Wagashi has increasingly gained their popularity in the market due to their fine arts of production and availability of ingredients. This course offers the theoretical knowledge and trains learners to compose and produce Wagashi sweets. Learners will gain a better understanding and attain the knowledge in principles of making Wagashi. The food and beverage industry plays an important role in contributing to the tourism industry. Given that this industry is wide with a diverse market, it requires its personnel to have good product knowledge and versatility in producing varying types of cuisines to meet diners' needs. At the end of the lesson, learners will attain knowledge and competencies related to the preparation of Wagashi sweets. They will also possess the ability to handcraft Wagashi commonly served during the spring season such as Cha-tsu, Nanohana, Chou-no-mai, Ouka and Tsuzumi
