This course is targeted at the public with basic baking knowledge and junior bakers who want to learn intermediate skills such as making advanced pastries. The programme will also promote opportunities for the public to pursue a career in the Food Service industry. The programme will build their understanding of advanced level pastries. Learners will learn the skills such as applying recipes and methods in preparing intermediate level pastries, methods of assembling, applying fillings and finishing to pastries. This programme is designed for a participant who has an interest to learn more about advanced pastries making.

- Apply intermediate level pastries preparation methods
- Apply baking processes and assembling methods for intermediate pastries
- Prepare finishing for intermediate pastries (dough pastries and cakes)
- Prepare finishing for intermediate pastries (entremets and tarts)
