• Responsible in daily opening and closing of kitchen operation
• Ensure that all food are processed according to the corporate and government regulatory control in hygiene and sanitation standards
• Keep a sanitized and orderly environment in the kitchen.
• Responsible to ensure that all menu items are available in service areas throughout service times
• Responsible to oversee other kitchen personnel and kitchen areas.
• Performs any other duties as directed by the Restaurant Manager
• Reporting to Restaurant Manager

Job Requirements:
• Experience in Japanese Cuisine operations would be a plus
• Excellent knowledge of BOH systems.
• Multitask and work efficiently under pressure
• Punctual and disciplined
• Ensure adequate manpower
• Implement stock control procedures and systems
• Monitor portion and waste control to minimize loss and wastage
• Lead the research and development for new and existing menu items, recipes, products and processes to improve sales and profitability
• Review staffing levels for maximum productivity, operational and financial objectives
• Promote teamwork and quality service through daily communication and coordination with other departments
• To ensure the security and proper storage of food and beverage products, inventory and equipment
• Monitor the preparation of workstations before the start of each service
• Monitor competitor and industry trends
• Positive and willing to learn attitude
