Key accountabilities

Supervise meals produced, according to menu specifications, production schedules and menu cycle;
Ensure products received meet expectations;
Assist to plan for menu changes, estimate raw materials requirement, and assign task to staff;
Follow orders in productions of meals as directed to the quality expected by customers, complying to food safety and hygiene regulations;
Carry out ordering according to load requirements, follow proper stock control and rotation (adhere to FIFO);
Ensure production staff adhere to HACCP, Medina food safety requirements, and all hygiene procedures;
Manage food cost and waste;
Assist in planning rosters, deployment of staff and service crew as and when requested;
Monitor the performance of machines/equipment and report any malfunction

Skills & experience

Have good knowledge in preparation of bakery products including breads, muffins, cookies, cakes and pastry
Able to use the computer for emails, MS Office, and systems related to areas of work
Ability to work in a large brigade with a multi culture team
Preferably with minimum 3 years of relevant experience in hotel food and beverage business
Comfortable with shift work arrangement
Applicants will undergo a practical test and interview to assess their product knowledge and supervisory skills.
