Responsibilities
- manage salmon sashimi processing line
- plan and assign work tasks to kitchen crew
- prepare and process whole salmon fish
- handle packaging of processed salmon sashimi
- monitor stock level for continuous supply to restaurants
- control food cost through maximising use of raw materials and minimising wastage
- maintain and upkeep kitchen equipment
- ensure cleanliness of production line, storage area and kitchen
- ensure hygiene and safety standards are strictly adhered to

Requirements
- at least one year of relevant working experience (preferably in sashimi preparation)
- quality-driven with good understanding of Japanese cuisine trends

Work environment
- Woodlands/Senoko
- 5.5 days per week (including weekends)
