NIGHT SHIFT - CLOSER

A Closer is responsible for a comprehensive set of duties performed after the last customer leaves to ensure the establishment is clean, secure, and ready for the next day's opening shift
KEY RESPONSBILITIES
Front-of-House (FOH) Closing Duties
Cleaning and Sanitizing:
- Wipe down and sanitize all tables, chairs, and dining surfaces
- Sweep, and mop all floor areas, including the dining room
- Polish stain steel
- Wipe down POS stations, host stand, and menus
- Clean Glassdoor
- Dishwashing
Restocking and Organization:
- Refill condiment dispensers, salt/pepper shakers, and napkin holders
- Restock service stations with clean supplies for the next shift
- Organize the dining area, arranging tables and chairs according to the floor plan
Back-of-House (BOH) Closing Duties
Cleaning and Sanitizing:
- Clean and disinfect all food preparation surfaces and line stations.
- Cleans and disinfect all walls and areas behind hot stations.
- Scrub kitchen equipment legs, including grills, flattops, and ovens.
- Wash and sanitize all cooking utensils, pots, and pans.
Key equipment Shutdown (FOH/BOH):
- Executes complete kitchen and service equipment shutdown procedures,
- Ensures all systems are powered down, cleaned, and maintained safely
- Completes end-of-day maintenance such as oil filtering and boil-outs to ensure all systems are safe, clean, and ready for the next day’s operations.
Safety and Security:
- Ensure all kitchen equipment, and ovens are turned off.
- Conduct a final walkthrough to ensure all areas are clean and clear of hazards.
- Check for any sighting of Pests and report if found.
