Position Title: Onsite Handmade Dumpling Specialist
Working Location: Central
Working Hours: 45 hours per week (Weekdays)
Salary Package: Basic + AWS + Allowance + Performance Bonus
Duration: Permanent
Key Responsibilities
Prepare and demonstrate handmade Chinese dumplings such as jiaozi, siu mai, and har gow at the station, ensuring consistent quality and presentation.
Prepare dough, skins, and fillings from scratch using traditional recipes and techniques, and produce enough dumplings to meet service needs.
Showcase folding and pleating techniques to guests when required, while coordinating with Chef de Partie on dumpling varieties, fillings, and cooking methods. Prepare pork and no-pork-no-lard options according to menu requirements.
Guide kitchen assistants on preparation, handling, and storage procedures.
Maintain a clean, hygienic, and presentable demonstration area, and store uncooked dumplings safely.
Advise on ingredient quality, dough ratios, and filling recipes to support consistency.

Prior handmade dumpling experience is required, with Chinese cuisine or dim sum experience preferred.
Must be skilled in wrapping, folding, and pleating, with solid food hygiene knowledge and a hands-on attitude.
