Head Chef – Baking & Pastry | Central Kitchen, Tampines | $4500 – $6000
Mission Central Kitchen (Mission Group) is hiring a Head Chef – Baking & Pastry to lead all bakery and pastry production at our central kitchen in Hersing Kitchen, Tampines. You’ll mainly produce for Chin Mee Chin, Singapore’s 101-year-old heritage bakery, and support our other concepts such as Casa Vostra, PETRA and Carlitos.
What you’ll do:
- Lead daily baking and pastry production for Chin Mee Chin and other Group concepts
- Plan production schedules to meet outlet orders and delivery timelines
- Keep every batch consistent in taste, texture and presentation
- Protect Chin Mee Chin’s heritage recipes while improving processes
- Develop new and seasonal products; standardise recipes for scale
- Manage ordering, stock, food cost and wastage
- Lead, train and roster bakers and pastry cooks
- Ensure SFA, HACCP and workplace safety compliance
What we’re looking for:
- 8+ years in baking and pastry, incl. 3+ years as Head Baker, Pastry Chef or Pastry Sous Chef
- Central kitchen, commercial bakery or large-scale production experience preferred
- Strong skills in breads, laminated doughs, pastries and desserts
- Experience in production planning, costing and inventory
- Strong leader who builds disciplined, positive teams
- WSQ Food Safety Course Level 1 (Level 3 is a plus)
- Able to work early mornings, weekends and PHs as required
- Experience with French & traditional local bakes is a plus
