Job Responsibilities
- Perform professional butchery and meat preparation, with a strong focus on premium beef.
- Receive, inspect and properly store meat deliveries to ensure quality, freshness and food safety standards.
- Break down, trim, portion and prepare various cuts of beef according to specifications and kitchen requirements.
- Maintain consistency in portion sizes, cuts and presentation to meet the standards of a premium steakhouse.
- Handle and maintain knives, butchery equipment and other tools safely and efficiently.
- Monitor meat quality, yield and wastage, and ensure proper utilisation of products.
- Prepare steaks and other meat cuts for service, including portioning and preparation according to required specifications.
- Work closely with the Chef and kitchen team to ensure sufficient meat preparation and availability for daily operations.
- Maintain high standards of cleanliness, hygiene and food safety within the butchery and kitchen areas.
- Ensure proper labelling, storage and rotation of meat products in accordance with food safety requirements.
- Support inventory checks and communicate stock or quality issues to the kitchen management team.
- Perform other butchery and kitchen-related duties as assigned.
Requirements
- Previous professional butchery experience is required.
- Strong experience in beef preparation, preferably within a steakhouse, butcher shop, meat supplier or beef-focused restaurant.
- Good knowledge of different beef cuts, trimming techniques, portioning and meat handling.
- Experience working with premium or high-quality beef will be an advantage.
- Good knife skills and strong attention to detail.
- Able to maintain consistency and quality while working in a fast-paced kitchen environment.
- Good understanding of food safety, hygiene and proper meat storage practices.
