What you will do
Kitchen & cooking
- Cook to house recipes and keep every plate consistent
- Run the pass during service: timing, quality, and communication with the floor
- Lead pasta, pizza, sauces, and hot/cold sections as needed
- Prep fresh pasta, dough, mise en place, and daily specials
- Keep the kitchen clean, stocked, and ready from open to close
Who we are looking for
- Solid kitchen experience, ideally as chef de partie, senior cook, or sous
- Comfortable running a pass and leading a small team
- Understands simple Italian cooking: pasta, sauces, pizza, grill, vegetables
- Consistent. The same dish should taste the same on Tuesday lunch and Saturday night
- Calm under pressure, clear with the team, no drama on the line
- Hands-on. This is a trattoria — you cook, you prep, you clean
- Reliable with opening, closing, and mise
- Respectful of house recipes. Improve them with the chef; do not reinvent them mid-service
- Happy with restaurant hours, including evenings and weekends
