We are looking for an experienced Japanese Chef to join our restaurant team in the Bugis area.
Working under the Head Chef, you will be responsible for both Japanese hot kitchen operations and sushi & sashimi preparation.
Candidates must have hands-on experience in handling and filleting fresh fish and be able to prepare sushi and sashimi independently.

Key Responsibilities
• Prepare and cook Japanese hot kitchen dishes
• Prepare sushi and sashimi for daily service
• Clean, fillet and portion fresh fish
• Handle daily mise en place and ingredient preparation
• Ensure consistency in food quality, presentation and portioning
• Work closely with the Head Chef and other kitchen team members
• Maintain cleanliness and organisation of the kitchen
• Assist with stock preparation, storage and inventory
• Follow food safety, hygiene and kitchen procedures
• Support other kitchen duties when required
Requirements
• Minimum 2 years of professional Japanese food kitchen experience
• Must have experience in handling and filleting fresh fish
• Must be able to prepare sushi and sashimi independently
• Experience in Japanese cuisine, izakaya or sushi restaurants is preferred
• Good knife skills and understanding of kitchen operations
• Able to work independently as well as part of a team
• Responsible and reliable
• Able to work in a fast-paced kitchen environment
• Able to work weekends and public holidays
• Food hygiene certification is an advantage
