Key Responsibilities
- Assist in the preparation of fresh seafood, including cleaning, descaling, gutting and portioning fish, prawns, crabs and shellfish.
- Prepare ingredients for Zichar dishes, including chopping vegetables, slicing meats, marinating items and preparing sauces and condiments.
- Support the chefs during service, particularly in seafood and wok-based Zichar cooking, to ensure smooth coordination and timely food preparation.
- Maintain cleanliness and hygiene of kitchen equipment, utensils, preparation areas and workstations at all times.
- Ensure proper storage, labelling and rotation of seafood and other perishable ingredients in accordance with food safety and HACCP guidelines.
- Assist with basic stock preparation, sauce replenishment and monitoring of ingredient levels to support continuous service.
- Receive, inspect and properly store daily seafood deliveries to ensure freshness and quality.
- Comply with all food hygiene, workplace safety and company regulations.
- Carry out any other duties assigned by the Head Chef or Sous Chef as required.
Requirements
- Prior experience in a seafood or zi char kitchen will be an advantage.
- Familiar with handling and cleaning fresh seafood.
- Comfortable working in a fast-paced, high-temperature kitchen environment.
- Physically fit and able to stand for long hours.
- Responsible team player with a positive attitude and willingness to learn.
- Possess a valid Food Hygiene Certificate
